We opened our first jars of pickles tonight! Sliced for hamburgers and spears on the side. They were DELICIOUS - my children are all for doing them again!
I got the recipe out of The Practical Produce Cookbook by Ray and Elsie Hoover and family (How to Plant, Pick, Prepare and Preserve Produce). I highly recommend this cookbook if you have a garden or enjoy purchasing fresh produce. There are recipes for just about everything. They give a page or two of information on each vegetable or fruit and also include canning or freezing instructions and recipes. It is one of my favorite summertime cookbooks! If you are interested in a basic dill pickle recipe let me know and I will get it to you.
Looking forward to 6 bushels of peaches on Thursday and some odds and ends leftovers from friends gardens as they finish up their canning. We didn't plant much garden this year as we have been VERY busy, so I am taking leftovers and planning to visit the farmers market as time allows.
Happy Canning! :)
